Ingredients

  • 2 cups blackberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon butter (optional)
  • 1 additional pie crust (for lattice or crumble topping)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Make the filling by gently combining blackberries, sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl.
  3. Roll out the first pie crust on a lightly floured surface to about 1/8 inch thick.
  4. Assemble the pie by placing the rolled crust into the pie dish and pouring in the berry mixture. Optionally, dot with butter.
  5. Prepare the top crust by rolling out the second crust. Create a lattice or crumble topping as desired.
  6. Bake the pie in the preheated oven for 30-35 minutes until golden brown and the filling bubbles.
  7. Cool the pie for at least 20 minutes before serving.

Notes

Chill your pie crust for 30 minutes before rolling it out for a flakier texture. Avoid using over-ripe berries.
