- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pie crust (store-bought or homemade)
- 1 tablespoon butter (optional)
- 1 additional pie crust (for lattice or crumble topping)
Instructions
- Preheat the oven to 425°F (220°C).
- Make the filling by gently combining blackberries, sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl.
- Roll out the first pie crust on a lightly floured surface to about 1/8 inch thick.
- Assemble the pie by placing the rolled crust into the pie dish and pouring in the berry mixture. Optionally, dot with butter.
- Prepare the top crust by rolling out the second crust. Create a lattice or crumble topping as desired.
- Bake the pie in the preheated oven for 30-35 minutes until golden brown and the filling bubbles.
- Cool the pie for at least 20 minutes before serving.
Notes
Chill your pie crust for 30 minutes before rolling it out for a flakier texture. Avoid using over-ripe berries.
