Description

Authentic birria tacos featuring tender beef marinated in spices and served with zesty consomé.


Ingredients

  • 2 pounds beef chuck roast
  • 4 cups beef broth
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Corn tortillas
  • Shredded cheese (optional)
  • Diced onion (for topping)
  • Fresh cilantro (for topping)

Instructions

  1. Combine beef chuck roast, beef broth, guajillo chiles, ancho chiles, garlic, onion, cumin, oregano, cinnamon, salt, and pepper in a crockpot.
  2. Cook on low for about 480 minutes, or until the beef is tender.
  3. Shred the beef using two forks when cooked.
  4. Blend the cooking liquid until smooth to create the consomé.
  5. Heat a skillet over medium heat and warm the corn tortillas.
  6. Fill the tortillas with shredded beef, cheese, onions, and cilantro.
  7. Fold and fry the tortillas until golden and crispy.
  8. Serve with warm consomé on the side for dipping.
