- 1 ½ cups vanilla wafer crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup heavy whipping cream
- 3 ripe bananas, sliced
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Whipped cream, for topping
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the vanilla wafer crumbs and melted butter in a mixing bowl. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
- Beat the softened cream cheese and granulated sugar together in another bowl until smooth and fluffy. Add the vanilla extract and beat until fully combined.
- Whip the heavy cream to soft peaks in a separate bowl. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Fold in the sliced bananas and lemon juice gently, ensuring each slice is coated in the creamy goodness.
- Pour the creamy filling over the prepared crust in the springform pan and spread it evenly to smooth the top.
- Bake for 45-50 minutes or until the center is set but slightly wobbly.
- Allow the cheesecake to cool completely in the pan before gently removing the sides of the springform pan.
- Top with additional whipped cream and beautiful banana slices just before serving.
