Description

A creamy, dreamy dessert with layers of banana, rich cream cheese, and a crunchy vanilla wafer crust.


Ingredients

  • 1 ½ cups vanilla wafer crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 3 ripe bananas, sliced
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Whipped cream, for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the vanilla wafer crumbs and melted butter in a mixing bowl. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
  3. Beat the softened cream cheese and granulated sugar together in another bowl until smooth and fluffy. Add the vanilla extract and beat until fully combined.
  4. Whip the heavy cream to soft peaks in a separate bowl. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Fold in the sliced bananas and lemon juice gently, ensuring each slice is coated in the creamy goodness.
  6. Pour the creamy filling over the prepared crust in the springform pan and spread it evenly to smooth the top.
  7. Bake for 45-50 minutes or until the center is set but slightly wobbly.
  8. Allow the cheesecake to cool completely in the pan before gently removing the sides of the springform pan.
  9. Top with additional whipped cream and beautiful banana slices just before serving.
