Deliciously addictive Baked Shrimp Crostini topped with creamy herb-infused shrimp on toasted baguette slices.

- 1 French baguette
- 1 pound cooked shrimp, chopped
- 8 ounces cream cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 2 tablespoons chives or parsley, finely chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the bread: Slice the baguette into 1/2-inch thick slices and place on a baking sheet. Brush lightly with olive oil and toast for about 8-10 minutes until golden brown.
- Create the shrimp mixture: In a mixing bowl, combine shrimp, cream cheese, garlic, lemon juice, and chives. Season with salt and pepper, and stir until well mixed.
- Assemble the crostini: Spoon the shrimp mixture onto each toasted baguette slice.
- Return to the oven for an additional 5-7 minutes until heated through.
- Serve warm and enjoy!
Notes
You can make the shrimp mixture a day in advance. For a crunchier texture, reheat in the oven.
