Description

Ingredients

  • 2 cups milk (or almond milk)
  • 1/2 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 1/2 cups fresh or frozen blueberries
  • Optional: additional blueberries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, milk, maple syrup, baking powder, salt, vanilla extract, and cinnamon in a large bowl. Whisk until well blended.
  3. Fold in the blueberries gently to preserve their juiciness.
  4. Pour the mixture into a greased baking dish, smoothing the top.
  5. Sprinkle extra blueberries on top if desired.
  6. Bake for 30-35 minutes until the top is golden and firm.
  7. Cool for a few minutes before serving, and drizzle with additional maple syrup if desired.

Notes

For a make-ahead option, prepare dry ingredients in advance and add the wet ingredients in the morning. Can also be made in an air fryer.
