Ingredients

- 2 cups rolled oats
- 2 cups milk (or almond milk)
- 1/2 cup maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 1/2 cups fresh or frozen blueberries
- Optional: additional blueberries for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the rolled oats, milk, maple syrup, baking powder, salt, vanilla extract, and cinnamon in a large bowl. Whisk until well blended.
- Fold in the blueberries gently to preserve their juiciness.
- Pour the mixture into a greased baking dish, smoothing the top.
- Sprinkle extra blueberries on top if desired.
- Bake for 30-35 minutes until the top is golden and firm.
- Cool for a few minutes before serving, and drizzle with additional maple syrup if desired.
Notes
For a make-ahead option, prepare dry ingredients in advance and add the wet ingredients in the morning. Can also be made in an air fryer.
