Ingredients

  • 4 medium sweet potatoes
  • 2 apples, diced
  • 1 cup pecans, chopped
  • 1 cup dried cranberries
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, combine diced apples, pecans, cranberries, maple syrup, cinnamon, nutmeg, and salt. Cook over medium heat for about 5-7 minutes until the apples are soft.
  4. Once the sweet potatoes are done, let them cool slightly, then slice them open and fluff the insides with a fork.
  5. Stuff the sweet potatoes with the apple mixture and serve warm.
