- 4 medium sweet potatoes
- 2 apples, diced
- 1 cup pecans, chopped
- 1 cup dried cranberries
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, combine diced apples, pecans, cranberries, maple syrup, cinnamon, nutmeg, and salt. Cook over medium heat for about 5-7 minutes until the apples are soft.
- Once the sweet potatoes are done, let them cool slightly, then slice them open and fluff the insides with a fork.
- Stuff the sweet potatoes with the apple mixture and serve warm.
Notes
- For added flavor, you can sprinkle some additional cinnamon on top before serving.
- This dish can be made ahead of time and reheated before serving.
