  • 2 cups chicken broth
  • 1 can cream of chicken soup

  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the chicken breasts to the skillet and cook until browned on both sides.
  4. In a large mixing bowl, combine the rice, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  5. Transfer the rice mixture to a greased baking dish and place the browned chicken breasts on top.
  6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
