- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 onion, chopped
- 2 cups mixed vegetables (carrots, peas, corn)

- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the chicken breasts to the skillet and cook until browned on both sides.
- In a large mixing bowl, combine the rice, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper.
- Transfer the rice mixture to a greased baking dish and place the browned chicken breasts on top.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
