Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk the flour, baking powder, and salt in a mixing bowl.
- Cream together the butter and sugar until light and fluffy.
- Incorporate the eggs one at a time, and stir in the vanilla extract.
- Combine the dry ingredients with the wet ingredients, alternating with milk.
- Fold in the white chocolate chips gently.
- Bake in the prepared pans for 25-30 minutes.
- Cool in the pans for 10 minutes before transferring to a cooling rack.
- Add raspberry jam between the layers after soaking with vanilla milk.
- Make the frosting by beating cream cheese and powdered sugar until smooth, then fold in raspberry puree.
- Frost the cake with the raspberry cream cheese frosting.
- Decorate with extra raspberry puree if desired.
Notes
You can bake the cake layers a day in advance. For a fun twist, substitute white chocolate with dark chocolate or use fresh raspberries instead of jam.
