Delicious and easy-to-make vegan pumpkin s’mores cookie bars that combine the flavors of pumpkin, chocolate, and graham crackers.

- 1 cup pumpkin puree
- 1/2 cup almond butter
- 1/2 cup maple syrup
- 1 cup rolled oats
- 1 cup graham cracker crumbs
- 1/2 cup vegan chocolate chips
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
- In another bowl, combine the rolled oats, graham cracker crumbs, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Fold in the vegan chocolate chips.
- Pour the mixture into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before cutting into bars and serving.
Notes
- Store leftovers in an airtight container for up to 5 days.
- For a gluten-free version, use gluten-free graham cracker crumbs.
- Feel free to add nuts or seeds for extra crunch.
