Ingredients

  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1 cup rolled oats
  • 1 cup graham cracker crumbs
  • 1/2 cup vegan chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
  3. In another bowl, combine the rolled oats, graham cracker crumbs, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Fold in the vegan chocolate chips.
  6. Pour the mixture into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before cutting into bars and serving.
