A delicious and healthy recipe for turkey and pumpkin meatballs served with a spiced tomato sauce, perfect for a comforting meal.

- 1 lb ground turkey
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1 can (15 oz) crushed tomatoes
- 1 tsp paprika
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, pumpkin puree, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and Italian seasoning. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add crushed tomatoes, paprika, and red pepper flakes. Simmer for 10 minutes.
- Once the meatballs are done, add them to the sauce and let them simmer together for an additional 5 minutes.
- Serve hot with your choice of side.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- These meatballs can be frozen for later use.
- Adjust the spice level by adding more or less red pepper flakes.
