Ingredients

  • 1 lb ground turkey
  • 1 cup pumpkin puree
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 can (15 oz) crushed tomatoes
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, pumpkin puree, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and Italian seasoning. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
  5. While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add crushed tomatoes, paprika, and red pepper flakes. Simmer for 10 minutes.
  6. Once the meatballs are done, add them to the sauce and let them simmer together for an additional 5 minutes.
  7. Serve hot with your choice of side.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs.
  • These meatballs can be frozen for later use.
  • Adjust the spice level by adding more or less red pepper flakes.
