A delicious way to use up Thanksgiving leftovers by creating smash burger tacos that are packed with flavor.
Ingredients

- 1 lb ground turkey or beef
- 2 cups leftover stuffing
- 1 cup leftover cranberry sauce
- 1 cup shredded cheese (cheddar or your choice)
- 8 small tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional toppings: lettuce, tomato, avocado
Instructions
- Heat olive oil in a skillet over medium heat.
- Form the ground turkey or beef into small balls and place them in the skillet.
- Smash the balls down with a spatula to form patties.
- Season with salt and pepper, and cook until browned on both sides.
- In the last few minutes of cooking, add the leftover stuffing on top of the patties and sprinkle with cheese.
- Cover the skillet to melt the cheese.
- Warm the tortillas in a separate pan or microwave.
- Assemble the tacos by placing the patty with stuffing and cheese on a tortilla, and top with cranberry sauce and any additional toppings.
Notes
- Feel free to customize with your favorite toppings.
- These tacos can be made with any leftover meats or sides from Thanksgiving.
- For a spicier kick, add jalapeños or hot sauce.
