Description

A delicious way to use up Thanksgiving leftovers by creating smash burger tacos that are packed with flavor.


Ingredients

  • 1 lb ground turkey or beef
  • 2 cups leftover stuffing
  • 1 cup leftover cranberry sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 8 small tortillas
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: lettuce, tomato, avocado

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Form the ground turkey or beef into small balls and place them in the skillet.
  3. Smash the balls down with a spatula to form patties.
  4. Season with salt and pepper, and cook until browned on both sides.
  5. In the last few minutes of cooking, add the leftover stuffing on top of the patties and sprinkle with cheese.
  6. Cover the skillet to melt the cheese.
  7. Warm the tortillas in a separate pan or microwave.
  8. Assemble the tacos by placing the patty with stuffing and cheese on a tortilla, and top with cranberry sauce and any additional toppings.
