Description

A vibrant bowl filled with quinoa, succulent chicken glazed in sweet chili sauce, fresh vegetables, and creamy avocado.

Ingredients

Scale
  • 2 cups cooked quinoa
  • 1 lb chicken breast, diced
  • 1/2 cup sweet chili sauce
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Prepare the chicken: Heat olive oil in a large skillet over medium heat. Season chicken breast with salt and pepper and cook until golden brown, about 7-10 minutes.
  2. Add sweet chili sauce in the last few minutes of cooking, tossing chicken to coat.
  3. Prepare the vegetables: Steam or stir-fry broccoli and carrots until tender, about 3-5 minutes.
  4. Assemble the bowls: Begin with quinoa, top with chicken, broccoli, bell peppers, and carrots, then add avocado slices.
  5. Garnish with cilantro and serve with lime wedges.

Notes

For enhanced flavor, marinate chicken in sweet chili sauce for a few hours before cooking. Make ahead by preparing quinoa and chopping vegetables in advance.
