Ingredients

  • 1 lb chicken breast
  • 1/2 cup peanut sauce
  • 1 cup lettuce, shredded (romaine or butter)
  • 1 red bell pepper, sliced
  • 1 carrot, grated
  • 1 cucumber, sliced
  • 4 large whole-wheat or flour tortillas
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. Cook the chicken: Heat a non-stick skillet over medium heat. Add a drizzle of oil and cook the chicken breast, seasoning it with a pinch of salt and pepper. Cook until golden and fully cooked through (about 7-8 minutes), then remove from heat and slice it into slender strips.
  2. Prepare the sauce: In a mixing bowl, whisk together the peanut sauce, soy sauce, and lime juice until smooth.
  3. Assemble the wraps: Lay a tortilla wrap flat on your clean cutting board. Start layering on the lettuce, followed by the sliced red bell pepper, carrot, cucumber, and the warm chicken strips.
  4. Drizzle with sauce: Generously drizzle your peanut sauce mixture over the layered ingredients.
  5. Roll it up: Starting from one end, carefully roll the tortilla wrap tightly, tucking in the sides as you go. Slice in half for easy handling.
  6. Garnish & serve: Sprinkle with fresh cilantro and enjoy immediately.
