- 1 lb chicken breast
- 1/2 cup peanut sauce
- 1 cup lettuce, shredded (romaine or butter)
- 1 red bell pepper, sliced
- 1 carrot, grated
- 1 cucumber, sliced
- 4 large whole-wheat or flour tortillas
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1/4 cup cilantro, chopped
Instructions
- Cook the chicken: Heat a non-stick skillet over medium heat. Add a drizzle of oil and cook the chicken breast, seasoning it with a pinch of salt and pepper. Cook until golden and fully cooked through (about 7-8 minutes), then remove from heat and slice it into slender strips.
- Prepare the sauce: In a mixing bowl, whisk together the peanut sauce, soy sauce, and lime juice until smooth.
- Assemble the wraps: Lay a tortilla wrap flat on your clean cutting board. Start layering on the lettuce, followed by the sliced red bell pepper, carrot, cucumber, and the warm chicken strips.
- Drizzle with sauce: Generously drizzle your peanut sauce mixture over the layered ingredients.
- Roll it up: Starting from one end, carefully roll the tortilla wrap tightly, tucking in the sides as you go. Slice in half for easy handling.
- Garnish & serve: Sprinkle with fresh cilantro and enjoy immediately.
