- 1 cup cooked rice

- 1 head of butter lettuce, leaves separated

- 1/4 cup shredded carrots

- 1 tablespoon lime juice
Instructions
- In a large bowl, combine the shredded chicken, cooked rice, peanut sauce, lime juice, green onions, carrots, and cilantro.
- Mix well until all ingredients are evenly coated with the peanut sauce.
- Take a lettuce leaf and spoon a portion of the chicken and rice mixture into the center.
- Wrap the lettuce around the filling and enjoy as a hand-held cup.
- Repeat with remaining ingredients.
