- 1 lb ground beef
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 avocado, diced
- 1/2 cup sour cream
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a skillet, cook the ground beef over medium heat until browned.
- Add taco seasoning, salt, and pepper, and mix well.
- In a bowl, layer the cooked rice as the base.
- Add the cooked beef on top of the rice.
- Layer black beans, corn, diced tomatoes, and shredded cheese over the beef.
- Top with diced avocado and a dollop of sour cream.
- Garnish with fresh cilantro before serving.
