- 2 cups cooked rice
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 avocado, diced
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef or turkey over medium heat until browned.
- Add the taco seasoning and follow package instructions, usually adding water and simmering.
- In a large bowl, combine the cooked rice, black beans, corn, and diced tomatoes.
- Once the meat is cooked, add it to the rice mixture and stir to combine.
- Season with salt and pepper to taste.
- Serve the mixture in bowls and top with shredded cheese, diced avocado, sour cream, and chopped cilantro.
Notes
- For a vegetarian option, substitute the meat with lentils or additional beans.
- Feel free to add other toppings like jalapeños, salsa, or lime juice.
