Ingredients
Scale
- 2 medium sweet potatoes, peeled and diced
- 1 bunch of kale, stems removed and chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 whole grain wraps
- 1 avocado, sliced
- 1/4 cup hummus
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a large skillet, sauté the chopped kale until wilted.
- Assemble the wraps by spreading hummus on each wrap, adding roasted sweet potatoes, sautéed kale, and avocado slices.
- Roll the wraps tightly and slice in half to serve.
