Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch of kale, stems removed and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole grain wraps
  • 1 avocado, sliced
  • 1/4 cup hummus

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large skillet, sauté the chopped kale until wilted.
  5. Assemble the wraps by spreading hummus on each wrap, adding roasted sweet potatoes, sautéed kale, and avocado slices.
  6. Roll the wraps tightly and slice in half to serve.
