Ingredients

- 2 large sweet potatoes, peeled and diced
- 2 apples, peeled and chopped
- 4 eggs
- 1 cup milk
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup maple syrup
- Salt and pepper to taste
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the diced sweet potatoes and chopped apples.
- In another bowl, whisk together the eggs, milk, cinnamon, nutmeg, maple syrup, salt, and pepper.
- Pour the egg mixture over the sweet potato and apple mixture and stir to combine.
- If using, fold in the chopped nuts.
- Transfer the mixture to a greased baking dish.
- Bake for 45-50 minutes, or until the sweet potatoes are tender and the casserole is set.
- Let it cool for a few minutes before serving.
