Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 apples, peeled and chopped
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup maple syrup
  • Salt and pepper to taste
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the diced sweet potatoes and chopped apples.
  3. In another bowl, whisk together the eggs, milk, cinnamon, nutmeg, maple syrup, salt, and pepper.
  4. Pour the egg mixture over the sweet potato and apple mixture and stir to combine.
  5. If using, fold in the chopped nuts.
  6. Transfer the mixture to a greased baking dish.
  7. Bake for 45-50 minutes, or until the sweet potatoes are tender and the casserole is set.
  8. Let it cool for a few minutes before serving.
