Ingredients

- 4 cups diced cucumbers
- 1 cup diced onions
- 1 cup diced bell peppers
- 2 cups sugar
- 1 cup apple cider vinegar
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- 1 teaspoon turmeric
- 1 teaspoon salt
Instructions
- In a large bowl, combine the diced cucumbers, onions, and bell peppers. Let sit for 2 hours.
- Drain excess liquid and rinse the vegetables under cold water.
- In a large pot, combine sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, and salt. Bring to a boil.
- Add the drained vegetables to the pot and simmer for 10 minutes.
- Pour the relish into sterilized jars and seal tightly.
- Let cool to room temperature, then refrigerate for at least 24 hours before using.
Notes
- For a spicier relish, add chopped jalapeños.
- This relish can be stored in the refrigerator for up to 6 months.
- Adjust the sugar to taste if you prefer a less sweet relish.
