Ingredients

  • 4 cups diced cucumbers
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 2 cups sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon turmeric
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine the diced cucumbers, onions, and bell peppers. Let sit for 2 hours.
  2. Drain excess liquid and rinse the vegetables under cold water.
  3. In a large pot, combine sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, and salt. Bring to a boil.
  4. Add the drained vegetables to the pot and simmer for 10 minutes.
  5. Pour the relish into sterilized jars and seal tightly.
  6. Let cool to room temperature, then refrigerate for at least 24 hours before using.

Notes

  • For a spicier relish, add chopped jalapeños.
  • This relish can be stored in the refrigerator for up to 6 months.
  • Adjust the sugar to taste if you prefer a less sweet relish.
