Ingredients

  • 1 block firm tofu, pressed and cubed
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Press the tofu to remove excess moisture and then cut it into cubes.
  2. In a bowl, mix the sweet chili sauce, soy sauce, and sesame oil.
  3. Heat a non-stick skillet over medium heat and add the tofu cubes.
  4. Cook the tofu until golden brown on all sides, about 10-15 minutes.
  5. Pour the sauce mixture over the tofu and cook for an additional 2-3 minutes until the tofu is well coated.
  6. In serving bowls, layer the cooked rice, mixed vegetables, and top with the glazed tofu.
  7. Garnish with sliced green onions and sesame seeds before serving.
