A delicious and moist chicken meatloaf infused with sun-dried tomatoes and fresh basil, perfect for a family dinner.
Ingredients

- 1 lb ground chicken
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup marinara sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, sun-dried tomatoes, basil, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Spread marinara sauce on top of the meatloaf.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added moisture, you can include a tablespoon of olive oil in the mixture.
- Serve with a side of vegetables or a salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
