- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup fresh strawberries, pureed
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a bowl, mix flour, granulated sugar, melted butter, and salt until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form a crust.
- Bake the crust for 15 minutes or until lightly golden.
- In another bowl, whisk together eggs, strawberry puree, lemon juice, and lemon zest.
- Pour the strawberry mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool, then dust with powdered sugar before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bars can be stored in the refrigerator for up to a week.
- Serve chilled for a refreshing treat.
