- 2 large eggs (room temperature)
- 1/2 cup milk (whole or 2%)
- 1/3 cup vegetable oil
- 1 1/2 teaspoons vanilla extract, divided
- 1 1/2 cups fresh strawberries, diced small
- 6 ounces cream cheese, softened
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin.
- Dice the strawberries and set aside.
- Soften the cream cheese to room temperature.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Mix eggs and sugar until smooth in a large bowl.
- Add milk, vegetable oil, and 1 teaspoon vanilla, mixing until combined.
- Fold the dry ingredients into the wet mixture until just combined.
- Fold in the strawberries coated with flour.
- Beat cream cheese, powdered sugar, and remaining vanilla until fluffy.
- Spoon muffin batter into cups and swirl in cream cheese mixture.
- Bake for 18-22 minutes or until golden.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
