Ingredients

  • 1 lb flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, sliced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, chili powder, and cumin. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook the marinated steak for about 5-7 minutes on each side, or until desired doneness. Remove from heat and let it rest.
  4. In the same skillet, add sliced bell pepper and onion, sautéing until softened.
  5. While the vegetables are cooking, slice the steak into thin strips.
  6. On a baking sheet, layer tortilla chips, followed by the sautéed vegetables and sliced steak.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and top with sour cream, fresh cilantro, and jalapeño slices if desired.
