Ingredients

  • 12 cremini mushrooms
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the cremini mushrooms and remove the stems.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add chopped spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese, Parmesan cheese, sautéed spinach, salt, pepper, and red pepper flakes.
  6. Stuff each mushroom cap with the ricotta and spinach mixture.
  7. Place the stuffed mushrooms on a baking sheet.
  8. Bake for 20-25 minutes or until the mushrooms are tender and the filling is golden.
