- 12 cremini mushrooms
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the cremini mushrooms and remove the stems.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped spinach and cook until wilted.
- In a bowl, mix ricotta cheese, Parmesan cheese, sautéed spinach, salt, pepper, and red pepper flakes.
- Stuff each mushroom cap with the ricotta and spinach mixture.
- Place the stuffed mushrooms on a baking sheet.
- Bake for 20-25 minutes or until the mushrooms are tender and the filling is golden.
- Serve warm and enjoy!
