Ingredients

  • 1 lb ground chicken
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, spinach, artichokes, breadcrumbs, Parmesan cheese, onion, garlic, egg, Italian seasoning, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let it rest for 10 minutes before slicing and serving.
