Ingredients

- 2 cups cooked rice
- 1 pound shrimp, peeled and deveined
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and garlic, sauté until fragrant.
- Add the shrimp and cook until they turn pink.
- Stir in the mixed vegetables and cook for another 2-3 minutes.
- Add the cooked rice, soy sauce, and sriracha sauce, mixing well.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
Notes
- For extra spice, add more sriracha sauce.
- Use day-old rice for better texture.
- Feel free to substitute shrimp with chicken or tofu for a different protein.
