- 1 cup milk
- 2 large eggs
- 1/4 cup vegetable oil

- 1–2 jalapeños, chopped
- 1 cup canned chili (optional)
Instructions
- Preheat your oven to 400°F (200°C) and grease your baking dish or cast iron skillet.
- Mix together the cornmeal, flour, baking powder, and salt in a large bowl.
- Whisk the milk, eggs, and vegetable oil in another bowl until smooth.
- Combine the wet and dry ingredients, mixing until just combined.
- Fold in the cheese and chopped jalapeños, ensuring they’re evenly distributed.
- Pour the batter into your prepared baking dish and smooth the top.
- Spread the canned chili on top if using.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before slicing and serve warm.
