Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup Korean BBQ sauce
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha (optional)

Instructions

  1. In a bowl, mix the shredded chicken with Korean BBQ sauce until well coated.
  2. In another bowl, combine mayonnaise and sriracha to create a spicy mayo.
  3. Lay out the tortillas on a flat surface.
  4. Spread a layer of spicy mayo on each tortilla.
  5. Add a portion of the BBQ chicken mixture on top of the mayo.
  6. Top with shredded lettuce, cucumbers, carrots, and green onions.
  7. Wrap the tortillas tightly, folding in the sides as you roll.
  8. Slice in half and serve immediately.

Notes

  • Feel free to adjust the spice level by adding more or less sriracha.
  • These wraps can be made ahead of time and stored in the refrigerator.
  • For a vegetarian option, substitute chicken with grilled tofu or tempeh.
