Instructions
- Peel and chop the carrots into uniform pieces.
- Boil the carrots in salted water until tender, about 15-20 minutes.
- Drain the carrots and return them to the pot.
- Add the heavy cream and butter to the pot with the carrots.
- Use a potato masher to smash the carrots until creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley if desired and serve warm.
