Description

Slow Cooker Honey Garlic Chicken & Rice is a delicious and easy meal that combines tender chicken with a sweet and savory honey garlic sauce, served over fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 cup chicken broth
  • 2 cups uncooked rice
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together honey, soy sauce, ketchup, garlic, and ginger.
  2. Place chicken breasts in the slow cooker and pour the honey garlic mixture over them.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add the chicken broth, rice, and water to the slow cooker.
  5. Stir to combine and cover again, cooking until the rice is tender.
  6. Once done, shred the chicken and mix it back into the rice.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • Serve with steamed vegetables for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
