Ingredients

  • 1 lb chicken breast
  • 8 oz pasta (penne or rotini)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the chicken broth, garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 4-6 hours or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Add the heavy cream, sun-dried tomatoes, and spinach.
  6. Stir in the cooked pasta and Parmesan cheese.
  7. Cook for an additional 30 minutes on low until heated through.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Feel free to add other vegetables like bell peppers or mushrooms.
