Instructions
- Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo and cook until al dente according to package instructions, usually 8-10 minutes. Drain and set aside, making sure to reserve a bit of the starchy cooking water for later.
- Sauté garlic: In a skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about one minute until fragrant, ensuring it doesn’t brown too much to avoid bitterness.
- Cook shrimp: Add the peeled and deveined shrimp to the skillet. Cook for approximately three minutes per side, or until they turn a gorgeous pink and opaque.
- Combine ingredients: Stir in the chicken broth, fresh lemon juice, and lemon zest. Let this mixture simmer for about two minutes, allowing the flavors to meld beautifully.
- Mix in orzo: Gently fold the drained orzo into the skillet and toss well to combine everything. If the mixture appears too dry, add a splash of the reserved pasta water. Season with salt and pepper to taste.
- Serve: Plate the luscious shrimp orzo, garnishing with the chopped parsley for a fresh finish. Serve warm and enjoy.
