Description

A vibrant and flavorful dish featuring succulent shrimp and tender orzo pasta, all coated in a tangy lemon garlic sauce.

Ingredients

Scale
  • 1 cup orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo and cook until al dente according to package instructions, usually 8-10 minutes. Drain and set aside, making sure to reserve a bit of the starchy cooking water for later.
  2. Sauté garlic: In a skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about one minute until fragrant, ensuring it doesn’t brown too much to avoid bitterness.
  3. Cook shrimp: Add the peeled and deveined shrimp to the skillet. Cook for approximately three minutes per side, or until they turn a gorgeous pink and opaque.
  4. Combine ingredients: Stir in the chicken broth, fresh lemon juice, and lemon zest. Let this mixture simmer for about two minutes, allowing the flavors to meld beautifully.
  5. Mix in orzo: Gently fold the drained orzo into the skillet and toss well to combine everything. If the mixture appears too dry, add a splash of the reserved pasta water. Season with salt and pepper to taste.
  6. Serve: Plate the luscious shrimp orzo, garnishing with the chopped parsley for a fresh finish. Serve warm and enjoy.

Notes

For substitutions, consider using whole wheat or gluten-free orzo. You can also replace shrimp with scallops or chicken.
