- 2 slices of bread
- 1/2 cup cooked salmon, flaked
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 tablespoon butter
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix the flaked salmon with mayonnaise, lemon juice, salt, and pepper.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer the salmon mixture and shredded cheese.
- Top with the second slice of bread, buttered side up.
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook until the bread is golden brown, about 3-4 minutes, then flip and cook the other side until golden and the cheese is melted.
