A delicious and easy-to-make Rustic Peach Galette that highlights the natural sweetness of fresh peaches in a flaky crust.

- 4–5 ripe peaches, sliced
- 1 tablespoon lemon juice
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 pre-made pie crust
- 1 egg, beaten (for egg wash)
- 1 tablespoon butter, cut into small pieces
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced peaches, lemon juice, sugar, vanilla extract, cornstarch, and salt. Toss to coat the peaches evenly.
- Roll out the pie crust on a baking sheet lined with parchment paper.
- Place the peach mixture in the center of the crust, leaving a 2-inch border around the edges.
- Fold the edges of the crust over the peaches, pleating as necessary.
- Brush the crust with the beaten egg and sprinkle with additional sugar if desired.
- Dot the filling with small pieces of butter.
- Bake for 35-40 minutes or until the crust is golden brown and the peaches are bubbly.
- Allow to cool slightly before serving.
Notes
- Serve warm or at room temperature.
- Great with a scoop of vanilla ice cream or whipped cream.
- Can substitute peaches with other fruits like plums or cherries.
