Ingredients

  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 pre-made pie crust
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine sliced peaches, lemon juice, sugar, vanilla extract, cornstarch, and salt. Toss to coat the peaches evenly.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Place the peach mixture in the center of the crust, leaving a 2-inch border around the edges.
  5. Fold the edges of the crust over the peaches, pleating as necessary.
  6. Brush the crust with the beaten egg and sprinkle with additional sugar if desired.
  7. Dot the filling with small pieces of butter.
  8. Bake for 35-40 minutes or until the crust is golden brown and the peaches are bubbly.
  9. Allow to cool slightly before serving.
