Description

A simple and healthy roasted vegetable and chickpea sheet pan dinner that is easy to prepare and packed with flavor.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chickpeas and mixed vegetables.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  4. Toss everything together until well coated.
  5. Spread the mixture evenly on a sheet pan.
  6. Roast in the oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  7. Remove from the oven and garnish with fresh herbs if desired.
  8. Serve warm and enjoy!
