Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chickpeas and mixed vegetables.
- Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
- Toss everything together until well coated.
- Spread the mixture evenly on a sheet pan.
- Roast in the oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and garnish with fresh herbs if desired.
- Serve warm and enjoy!
