Ingredients

  • 1 cup roasted pumpkin, mashed
  • 4 oz goat cheese, crumbled
  • 4 slices of whole grain bread
  • 2 tbsp olive oil
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat a panini press or grill pan over medium heat.
  2. In a bowl, mix the mashed roasted pumpkin with goat cheese, thyme, salt, and pepper.
  3. Spread the pumpkin and goat cheese mixture evenly on two slices of bread.
  4. Top with the remaining slices of bread to form sandwiches.
  5. Brush the outside of the sandwiches with olive oil.
  6. Place the sandwiches in the panini press or grill pan and cook until golden brown and crispy, about 3-5 minutes.
  7. Remove from heat, slice, and serve warm.
