- 1 cup roasted pumpkin, mashed
- 4 oz goat cheese, crumbled
- 4 slices of whole grain bread
- 2 tbsp olive oil
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat a panini press or grill pan over medium heat.
- In a bowl, mix the mashed roasted pumpkin with goat cheese, thyme, salt, and pepper.
- Spread the pumpkin and goat cheese mixture evenly on two slices of bread.
- Top with the remaining slices of bread to form sandwiches.
- Brush the outside of the sandwiches with olive oil.
- Place the sandwiches in the panini press or grill pan and cook until golden brown and crispy, about 3-5 minutes.
- Remove from heat, slice, and serve warm.
Notes
- For added flavor, consider adding caramelized onions or arugula.
- Make sure the pumpkin is well-roasted for the best taste.
