A delicious and healthy side dish featuring roasted delicata squash drizzled with a rich cinnamon butter.


Ingredients

  • 2 medium delicata squash
  • 4 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise and scoop out the seeds.
  3. Cut the squash into half-moon slices.
  4. In a small saucepan, melt the butter over low heat and stir in the cinnamon and brown sugar.
  5. Toss the squash slices with the cinnamon butter, salt, and pepper.
  6. Spread the squash on a baking sheet in a single layer.
  7. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized.
  8. Serve warm and enjoy!

Notes

  • For a vegan option, substitute butter with coconut oil.
  • Adjust the sweetness by adding more or less brown sugar.
  • Delicata squash can be left unpeeled as the skin is edible.
