A delicious and healthy side dish featuring roasted delicata squash drizzled with a rich cinnamon butter.

- 2 medium delicata squash
- 4 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the delicata squash in half lengthwise and scoop out the seeds.
- Cut the squash into half-moon slices.
- In a small saucepan, melt the butter over low heat and stir in the cinnamon and brown sugar.
- Toss the squash slices with the cinnamon butter, salt, and pepper.
- Spread the squash on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized.
- Serve warm and enjoy!
Notes
- For a vegan option, substitute butter with coconut oil.
- Adjust the sweetness by adding more or less brown sugar.
- Delicata squash can be left unpeeled as the skin is edible.
