- 1 whole chicken (about 4–5 lbs)
- 1 cup cranberry juice
- 1/2 cup orange juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh cranberries and orange slices for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, combine cranberry juice, orange juice, brown sugar, soy sauce, garlic, and ginger. Bring to a boil and then simmer until thickened.
- Season the chicken with salt and pepper, then place it in a roasting pan.
- Brush the chicken with the cranberry orange glaze.
- Roast the chicken in the preheated oven for about 1.5 hours, basting with the glaze every 30 minutes.
- Check the internal temperature; it should reach 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
- Garnish with fresh cranberries and orange slices before serving.

- For extra flavor, marinate the chicken in the glaze overnight.
- Serve with your favorite sides like mashed potatoes or green beans.
- Leftovers can be stored in the refrigerator for up to 3 days.
