Instructions
- Preheat the oven to 425°F (220°C).
- Toss the carrots with olive oil, kosher salt, and black pepper in a large bowl.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway through, until tender and caramelized.
- Combine ricotta, lemon zest, and lemon juice in a mixing bowl and whip until smooth.

- Drizzle with hot honey to serve.
