Description

Ingredients

  • 2 firm cucumbers, thinly sliced
  • 8 oz full-fat cream cheese
  • 8 slices soft white or whole grain bread
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions

  1. Slice the cucumbers thinly, about 1/8 inch thick, and sprinkle with salt.
  2. Combine cream cheese with dill or parsley in a mixing bowl, season with salt and pepper.
  3. Spread cream cheese mixture evenly on one side of each bread slice.
  4. Layer cucumber slices atop half of the cream cheese-covered bread.
  5. Top with another slice of bread, cut into quarters or halves.
  6. Chill the sandwiches for at least 15 minutes before serving.

Notes

Make ahead by preparing the cream cheese spread and cucumber slices separately. Assemble right before serving for best freshness.
