- 2 firm cucumbers, thinly sliced
- 8 oz full-fat cream cheese
- 8 slices soft white or whole grain bread
- 2 tbsp fresh dill or parsley, chopped
- Salt and pepper to taste
- Lemon juice (optional)
Instructions
- Slice the cucumbers thinly, about 1/8 inch thick, and sprinkle with salt.
- Combine cream cheese with dill or parsley in a mixing bowl, season with salt and pepper.
- Spread cream cheese mixture evenly on one side of each bread slice.
- Layer cucumber slices atop half of the cream cheese-covered bread.
- Top with another slice of bread, cut into quarters or halves.
- Chill the sandwiches for at least 15 minutes before serving.
Notes
Make ahead by preparing the cream cheese spread and cucumber slices separately. Assemble right before serving for best freshness.
