  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, sugar, oil, egg, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until a toothpick comes out clean.
  7. Let the cookies cool completely.
  8. In a separate bowl, beat together cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread the cream cheese filling on the flat side of one cookie and sandwich it with another cookie.
  10. Repeat with remaining cookies and filling.
