Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add pumpkin puree, powdered sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  6. Pour the pumpkin cheesecake mixture over the crust in the baking dish.
  7. Use a knife to swirl the mixture for a marbled effect.
  8. Bake for 30-35 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.

  • For a stronger pumpkin flavor, add more pumpkin puree.
