  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, mix the pumpkin puree, milk, egg, vanilla extract, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
  7. Let the donut holes cool for a few minutes before rolling them in powdered sugar.
