- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 can (15 oz) pumpkin puree
- 3 large eggs
- 1 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine flour, brown sugar, and granulated sugar.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, whisk together pumpkin puree, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour the pumpkin mixture over the crust in the baking dish.
- Bake for 45-50 minutes or until the filling is set and a toothpick comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For a spicier flavor, add more cinnamon or a pinch of cloves.
- These bars can be served with whipped cream or a dusting of powdered sugar.
- Store leftovers in the refrigerator for up to 3 days.
