Delicious pumpkin pecan cheesecake bars that combine the flavors of fall with a creamy cheesecake layer and a crunchy pecan topping.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup pumpkin puree
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add pumpkin puree, powdered sugar, eggs, vanilla extract, cinnamon, and nutmeg. Mix until well combined.
- Pour the cheesecake mixture over the crust in the baking dish.
- Sprinkle chopped pecans on top of the cheesecake layer.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
- For a richer flavor, use brown sugar instead of granulated sugar.
- These bars can be made a day in advance for better flavor.
- Serve with whipped cream for an extra treat.
