Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the vegetable oil, pumpkin puree, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool completely on a wire rack.
  8. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and ground cinnamon, mixing until smooth.
  9. Add milk as needed to reach desired consistency, then frost the cooled cupcakes.
