- 2 large Portobello mushrooms
- 4 slices of Gruyère cheese
- 4 slices of ciabatta bread
- 2 tablespoons of olive oil
- 1 clove of garlic, minced
- Salt and pepper to taste
- Fresh basil leaves (optional)
Instructions
- Preheat a grill or panini press.
- Clean the Portobello mushrooms and remove the stems.
- Brush the mushrooms with olive oil and sprinkle with minced garlic, salt, and pepper.
- Grill the mushrooms for about 5-7 minutes on each side until tender.
- Assemble the panini by placing a slice of Gruyère cheese on one slice of ciabatta, followed by the grilled mushrooms and fresh basil, then top with another slice of cheese and ciabatta.
- Grill the assembled panini in the press or on the grill until the bread is golden brown and the cheese is melted, about 3-5 minutes.
- Slice and serve warm.
Notes
- For added flavor, marinate the mushrooms in balsamic vinegar before grilling.
- Feel free to add other vegetables like spinach or roasted red peppers.
