- 1 onion, sliced
- 1 bell pepper, sliced
- 2 cups mushrooms, sliced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 350°F (175°C).
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add the sliced onions and bell peppers, cooking until they soften and become fragrant, about 5-7 minutes.
- Toss in the sliced steak and mushrooms, seasoning with salt, pepper, garlic powder, and paprika. Cook until the steak is browned and tender, about 7-10 minutes.
- Pour in the beef broth, stirring to combine everything.
- Transfer the mixture into a well-greased 9×13-inch baking dish.
- Top generously with shredded cheddar cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool slightly before serving.
Notes
Prepare the filling a day in advance for a quicker dinner. You can also use turkey or a plant-based protein as alternatives to beef.
