- 2 chicken breasts, boneless and skinless
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- 1/2 teaspoon ginger, grated
- 4 large tortillas
- 1 cup lettuce, shredded
- 1/2 cup carrots, julienned
- 1/2 cup cucumber, sliced
- 1/4 cup cilantro, chopped
Instructions
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, and ginger to create the sauce.
- Marinate the chicken breasts in the sauce for at least 30 minutes.
- Grill or pan-fry the chicken until fully cooked, about 6-7 minutes per side.
- Let the chicken rest for a few minutes, then slice it thinly.
- Lay out the tortillas and layer with lettuce, carrots, cucumber, cilantro, and sliced chicken.
- Drizzle additional peanut sauce over the top if desired.
- Wrap tightly and serve immediately.
Notes
- For a spicier kick, add some chili flakes to the sauce.
- Can substitute chicken with tofu for a vegetarian option.
- Wraps can be made ahead of time and stored in the refrigerator.
