Ingredients

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 4 large tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumber, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, and ginger to create the sauce.
  2. Marinate the chicken breasts in the sauce for at least 30 minutes.
  3. Grill or pan-fry the chicken until fully cooked, about 6-7 minutes per side.
  4. Let the chicken rest for a few minutes, then slice it thinly.
  5. Lay out the tortillas and layer with lettuce, carrots, cucumber, cilantro, and sliced chicken.
  6. Drizzle additional peanut sauce over the top if desired.
  7. Wrap tightly and serve immediately.

  • For a spicier kick, add some chili flakes to the sauce.
